If you have five minutes and a slow cooker, you can have soup night on autopilot. These are my go-to dump-and-go slow cooker soups for busy weeknights, meaning: no pre-cooking, no browning meat, no sautéing onions. You open cans, pour broth, shake in seasoning, and let the crockpot do the heavy lifting.

Each recipe below includes a quick ingredient list, a 5-minute assembly plan, and a few forgiving swaps. Because honestly, some nights the best seasoning is simply not stressing.

Before you start

Yield: These recipes generally make about 6 servings (roughly 8 to 10 cups), depending on how brothy you like your soup.

Slow cooker size: Most work best in a 6-quart slow cooker. If you have a 4-quart, halve the recipe or choose the less bulky options (lentil, salsa verde, broccoli cheddar).

Salt note: Broth varies a lot. Start with the listed salt (or 1 teaspoon kosher salt if it says “to taste”), then adjust at the end.

My 5-minute dump-and-go rules

  • Layer smart: Put sturdy things on the bottom (raw chicken, carrots, potatoes). Add beans and tomatoes next. Creamy add-ins go in at the end.
  • Keep frozen veggies frozen: They go straight in.
  • Do not fear the spice jar: Dried herbs and seasoning blends are your best friends on hectic days.
  • Watch the clock: Most soups do great on LOW for 6 to 8 hours or HIGH for 3 to 4 hours, but quick pasta, delicate veggies, and dairy finishers do best on the shorter end.
  • Cover the meat: For chicken and beef, add enough broth so the meat is mostly submerged for even cooking.
  • Finish bright: Lemon, lime, vinegar, pesto, or a handful of herbs makes slow-cooked flavors pop.

1) Creamy Tortellini Soup

Why it works: Refrigerated tortellini turns this into a “real dinner” soup with almost no effort.

Dump-and-go ingredients

  • 1 lb boneless skinless chicken breasts (optional, see swaps)
  • 1 (28 oz) can crushed tomatoes
  • 4 cups chicken broth
  • 1 small onion, diced (or 1 tbsp onion flakes)
  • 3 to 4 cloves garlic, minced (or 1 tsp garlic powder)
  • 1 tsp Italian seasoning
  • 2 cups chopped zucchini or carrots
  • 1 (9 to 12 oz) package refrigerated cheese tortellini (add near the end)
  • 2 cups spinach (add near the end)
  • 1/2 to 1 cup half-and-half (stir in at the end)
  • Salt and pepper

5-minute plan

Add everything except tortellini, spinach, and half-and-half. Cook on LOW for 6 to 7 hours or HIGH for 3 to 4 hours. Shred chicken (if using), then stir in tortellini and cook on HIGH for 10 to 20 minutes until tender (check early to avoid mush). Stir in spinach and half-and-half.

Swaps: Skip chicken and add a can of cannellini beans. Use frozen spinach. Dairy-free? Finish with full-fat coconut milk.

2) Salsa Verde Chicken Soup

Why it works: Jarred salsa verde is instant flavor. This one smells amazing by hour two.

Dump-and-go ingredients

  • 1 1/2 to 2 lb boneless skinless chicken thighs or breasts
  • 1 (16 oz) jar salsa verde
  • 4 cups chicken broth
  • 1 (15 oz) can white beans, drained
  • 1 cup frozen corn
  • 1 tsp ground cumin
  • 1/2 tsp oregano
  • Salt to taste (start with 1 tsp kosher salt if using low-sodium broth)
  • Juice of 1 lime (finish)

5-minute plan

Dump everything except lime into the slow cooker (make sure chicken is mostly covered by liquid). Cook on LOW for 6 to 8 hours or HIGH for 3 to 4 hours. Shred chicken, stir, finish with lime.

Swaps: Add a block of cream cheese at the end for creamy, or stir in plain Greek yogurt per bowl.

3) Vegetable Beef Soup

Why it works: Frozen mixed vegetables and canned tomatoes do the heavy lifting. No browning required.

Dump-and-go ingredients

  • 1 1/2 lb stew meat
  • 5 cups beef broth
  • 1 (28 oz) can diced tomatoes
  • 2 tbsp tomato paste (optional but great)
  • 3 cups frozen mixed vegetables
  • 2 cups diced potatoes (fresh or frozen hash browns)
  • 1 tsp Italian seasoning
  • 1 to 2 tsp salt (start with 1)
  • 1/2 tsp black pepper

5-minute plan

Dump it all in, stir, and cook on LOW for 8 hours or HIGH for 4 to 5 hours until beef is tender.

Ground beef note: If you want to use ground beef, food-safety guidance is mixed on truly dump-and-go ground meat. The safest and best texture is to brown it first. If you still choose dump-and-go, use lean ground beef, break it up very finely, cook on HIGH, and confirm it reaches 160°F. Expect some clumping and a bit of grease (skim if needed).

4) Potato Corn Chowder

Why it works: Potatoes thicken the soup naturally, and cream goes in at the end so it stays smooth.

Dump-and-go ingredients

  • 6 cups diced potatoes (Yukon gold are perfect)
  • 1 small onion, diced (or onion flakes)
  • 4 cups chicken or vegetable broth
  • 3 cups frozen corn
  • 1 tsp salt (plus more to taste)
  • 1/2 tsp black pepper
  • 1 tsp smoked paprika (optional)
  • 1 cup milk or half-and-half (finish)
  • 2 tbsp butter (finish, optional)

5-minute plan

Cook everything except milk and butter on LOW for 6 to 7 hours or HIGH for 3 to 4 hours. Mash a few potatoes right in the pot to thicken. Stir in milk and butter.

Swaps: Add ham cubes or cooked bacon at serving time. For dairy-free, use unsweetened oat milk plus a drizzle of olive oil.

5) Red Lentil Tomato Soup

Why it works: Red lentils break down into a silky texture without blending, and the seasoning is forgiving.

Dump-and-go ingredients

  • 1 1/2 cups red lentils, rinsed
  • 1 (28 oz) can crushed tomatoes
  • 5 cups vegetable broth (plus more as needed)
  • 1 cup diced carrots (or frozen)
  • 1 tsp ground cumin
  • 1/2 tsp turmeric (optional)
  • 1 tsp salt (to start)
  • Juice of 1/2 lemon (finish)

5-minute plan

Dump everything except lemon into the slow cooker. Cook on LOW for 6 to 7 hours or HIGH for 3 to 4 hours. Stir well at the end. If it looks thicker than you want (it can happen with long slow cooking), loosen with a splash of broth. Finish with lemon.

Swaps: Add a handful of spinach. Want it creamy? Stir in coconut milk.

6) Chicken Taco Soup

Why it works: This is my “there is nothing in the fridge” soup. It uses mostly pantry staples and still tastes like you tried.

Dump-and-go ingredients

  • 1 1/2 lb chicken breasts or thighs
  • 1 (15 oz) can black beans, drained
  • 1 (15 oz) can pinto beans, drained
  • 1 (15 oz) can corn, drained (or frozen)
  • 1 (10 oz) can diced tomatoes with green chiles
  • 1 (15 oz) can diced tomatoes
  • 1 packet taco seasoning (or 2 tbsp homemade)
  • 3 to 4 cups chicken broth (depending on how thick you like it)

5-minute plan

Dump and stir (make sure chicken is mostly covered). Cook on LOW for 6 to 8 hours or HIGH for 3 to 4 hours. Shred chicken and stir back in.

Serve with: Crushed tortilla chips, shredded cheese, avocado, or a squeeze of lime.

7) Lemon Garlic Chicken Orzo Soup

Why it works: Bright lemon and garlic keep it from tasting flat, and you can use orzo or quick-cooking rice.

Dump-and-go ingredients

  • 1 1/2 lb chicken thighs or breasts
  • 6 cups chicken broth
  • 2 cups sliced carrots
  • 2 cups chopped celery (or a bag of frozen mirepoix)
  • 1 tsp salt (plus more to taste)
  • 1/2 tsp black pepper
  • 1 tsp garlic powder (or 3 cloves minced)
  • 1 bay leaf (optional)
  • 1 cup orzo (add near the end)
  • Juice of 1 to 2 lemons (finish)

5-minute plan

Add everything except orzo and lemon (chicken should be mostly submerged). Cook on LOW for 6 to 7 hours or HIGH for 3 to 4 hours. Shred chicken. Stir in orzo and cook on HIGH for 15 to 25 minutes, checking at 15 minutes so it stays pleasantly chewy. Finish with lemon.

Swaps: Use 3/4 cup white rice instead, but add it for the last 60 to 90 minutes on LOW so it does not get mushy.

8) White Bean Kale Parmesan Soup

Why it works: Beans make it hearty, kale holds up beautifully in the slow cooker, and Parmesan rind adds restaurant-level flavor with zero effort.

Dump-and-go ingredients

  • 2 (15 oz) cans cannellini beans, drained and rinsed
  • 5 cups chicken or vegetable broth
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 tsp Italian seasoning
  • 1/2 tsp salt (plus more to taste)
  • 2 cups chopped kale
  • 1 Parmesan rind (optional but fantastic)

5-minute plan

Dump everything in and cook on LOW for 6 to 7 hours or HIGH for 3 to 4 hours. Remove the Parmesan rind before serving.

Make it extra filling: Stir in cooked sausage slices at the end, or serve with toasted bread.

9) Broccoli Cheddar Soup

Why it works: The slow cooker softens everything, then you blend a bit for that classic creamy texture. No flour needed.

Dump-and-go ingredients

  • 6 cups broccoli florets (fresh or frozen)
  • 1 cup shredded carrots (or matchstick carrots)
  • 4 cups chicken or vegetable broth
  • 1 tsp salt (plus more to taste)
  • 1/2 tsp pepper
  • 1/2 tsp mustard powder (optional)
  • 2 cups shredded cheddar (add at the end)
  • 4 oz cream cheese (add at the end)

5-minute plan

Cook everything except cheddar and cream cheese on LOW for 4 to 6 hours or HIGH for 2 to 3 hours until very tender. Use an immersion blender to blend part of the soup. Stir in cream cheese until smooth, then add cheddar gradually and stir until melted.

Tip: If your slow cooker runs hot, stick to the shorter end. Overcooking broccoli can mute the flavor.

10) Classic Minestrone

Why it works: This is the clean-out-the-pantry soup that somehow tastes like a plan.

Dump-and-go ingredients

  • 1 (28 oz) can crushed or diced tomatoes
  • 4 cups vegetable broth
  • 1 (15 oz) can kidney beans, drained
  • 1 (15 oz) can cannellini beans, drained
  • 2 cups frozen mixed vegetables (or chopped zucchini, carrots, green beans)
  • 1 tsp Italian seasoning
  • 1/2 tsp salt (plus more to taste)
  • 1 cup small pasta like ditalini or small shells (add near the end)
  • 2 cups spinach (stir in at the end)

5-minute plan

Cook everything except pasta and spinach on LOW for 6 to 8 hours or HIGH for 3 to 4 hours. Add pasta for the last 15 to 25 minutes on HIGH, stirring once if you can, and start checking at 15 minutes. Stir in spinach to wilt.

Toppings that make any soup feel special

  • Crunch: tortilla chips, croutons, toasted breadcrumbs, oyster crackers
  • Fresh: chopped cilantro, parsley, green onion, baby arugula
  • Creamy: sour cream, Greek yogurt, shredded cheese, a drizzle of cream
  • Bright: lemon juice, lime juice, a splash of vinegar, pickled jalapeños

Storage and freezing

  • Fridge: Most of these keep well for up to 4 days in an airtight container.
  • Pasta and orzo: They keep drinking up broth. If you are planning leftovers, cook pasta separately and add per bowl, or add an extra splash of broth when reheating.
  • Dairy-based soups: Potato corn chowder and broccoli cheddar are best within a few days. If you want to freeze, freeze the base and add dairy after reheating if possible.
  • Freezer-friendly picks: Salsa verde chicken, taco soup, lentil tomato, and vegetable beef (especially with stew meat) freeze well for about 2 to 3 months.

Dump-and-go FAQ

Can I put frozen chicken in the slow cooker?

I skip it. For food safety, it is best to start with thawed chicken so the slow cooker gets the contents up to a safe temperature quickly. If you forgot to thaw, a good backup is using pre-cooked rotisserie chicken and adding it near the end.

What internal temperature should the meat reach?

Chicken should reach 165°F. Ground beef should reach 160°F. (Stew meat is safe once fully cooked, and it is best when it is tender.) A quick-read thermometer takes the guesswork out.

How do I keep pasta from getting mushy?

Add pasta near the end and cook just until tender. If you want leftovers that hold up, cook pasta separately and add per bowl.

My soup tastes bland. What fixes it fast?

Try one of these: an extra pinch of salt, a squeeze of lemon or lime, a splash of vinegar, a spoonful of pesto, or a sprinkle of Parmesan. Slow cooker soups love a bright finish.

Can I prep these the night before?

Yes. Combine everything that is safe to sit together in the fridge (most ingredients are fine). Keep dairy and pasta aside to add later. In the morning, dump the chilled contents into the crock and start cooking.
