Weeknights can be a lot. I have lived the teacher life, the mom life, and the 5 PM scramble where everyone is hungry and I am staring into the fridge like it might magically hand me a plan.
These are my go-to 5-ingredient slow cooker dinners for the weeks when you need dinner handled, not another project. Each recipe uses five main ingredients (plus salt and pepper, and I assume you have basics like oil or cooking spray).
Quick note: A couple of these count the serving base (rolls or rice) as the fifth ingredient. If you would rather keep the slow cooker portion to five items, just treat the base as a “serve with” and call it a win anyway.
Pick one, toss it in the slow cooker, and come home to a house that smells like you tried way harder than you did.
My 5-ingredient rules
- Pantry basics do not count: salt, pepper, water, broth made from bouillon, and a little oil or cooking spray.
- Bagged shortcuts are welcome: frozen onions and peppers, pre-shredded cheese, and microwave rice are all fair game on busy days.
- Know your slow cooker: every model runs a little different. Check early the first time you try a recipe.
Food safety, the simple version: Poultry is done at 165°F in the thickest part. Pork and beef should be cooked until tender and safely hot, and leftovers should be reheated to 165°F.
1) Salsa Chicken Tacos
Why I love it: This is the weeknight safety net. It is forgiving, juicy, and works for tacos, bowls, or salads.
Makes: about 6 servings
Ingredients (5)
- 1.5 to 2 lb boneless skinless chicken breasts (or thighs)
- 2 cups salsa (about 16 oz)
- 1 packet taco seasoning (about 1 oz)
- 1 (15 oz) can black beans, drained
- 1.5 cups frozen corn
How to make it
- Add chicken to the slow cooker. Sprinkle on taco seasoning.
- Pour salsa over top, then add beans and corn.
- Cook on LOW 4 to 6 hours or HIGH 2.5 to 3.5 hours, until chicken reaches 165°F and shreds easily. Chicken breasts can dry out if they go too long, so start checking at 4 hours on LOW if yours are on the thinner side.
- Shred chicken in the slow cooker and stir.
Serve with: tortillas, rice, lettuce, or tortilla chips (not counted).
Easy swap: Use pinto beans instead of black beans, or swap salsa for canned diced tomatoes with green chiles.
If using frozen chicken: It works, but it usually takes longer. Plan on LOW, and cook until the chicken hits 165°F.
2) Honey Garlic Chicken Thighs
Why it works: The sauce tastes like takeout, but you did not have to stand over a stove.
Makes: about 4 to 6 servings
Ingredients (5)
- 1.5 to 2 lb boneless skinless chicken thighs
- 1/2 cup honey
- 1/2 cup soy sauce
- 2 tbsp minced garlic
- 4 cups frozen broccoli florets
How to make it
- Whisk honey, soy sauce, and garlic in the slow cooker.
- Add chicken and turn to coat.
- Cook on LOW 5 to 6 hours or HIGH 2.5 to 3.5 hours, until chicken reaches 165°F.
- Add broccoli for the last 20 to 30 minutes. For the most reliable result, switch to HIGH during this veggie window, or use thawed broccoli on LOW.
Dinner in one: Spoon over microwave rice or noodles (not counted).
Tip: If you like a thicker sauce, remove the lid and cook on HIGH for 10 to 15 minutes, or simmer the sauce quickly in a small pot.
3) Creamy Ranch Pork Chops and Potatoes
Why parents love it: Cozy, mild flavors and everything cooks together.
Makes: about 4 servings
Ingredients (5)
- 4 boneless pork chops (about 1.5 to 2 lb total)
- 1.5 lb baby potatoes, halved
- 1 packet ranch seasoning mix (about 1 oz)
- 1 (10.5 oz) can cream of chicken soup
- 1 (12 oz) bag baby carrots
How to make it
- Place potatoes and carrots in the slow cooker.
- Lay pork chops on top. Sprinkle ranch seasoning over everything.
- Spoon cream of chicken soup over the top.
- Cook on LOW 6 to 7 hours or HIGH 3 to 4 hours, until potatoes are tender and pork is cooked through.
Easy swap: Cream of mushroom soup works great too.
4) Italian Beef Sandwiches
Why it is a crowd-pleaser: It tastes like you stopped at a sandwich shop, but the slow cooker did the heavy lifting.
Makes: about 6 to 8 servings
Ingredients (5)
- 3 to 4 lb beef chuck roast
- 1 packet onion soup mix (about 1 oz)
- 1 (16 oz) bottle Italian dressing
- 1 (12 to 16 oz) jar pepperoncini peppers, plus 2 to 4 tbsp juice
- Hoagie rolls (for serving)
How to make it
- Put roast in the slow cooker.
- Sprinkle onion soup mix over top. Add pepperoncini and the juice.
- Pour Italian dressing over everything.
- Cook on LOW 8 to 9 hours or HIGH 5 to 6 hours, until it shreds easily.
- Shred beef and pile onto rolls with some juices.
Tip: For less heat, use fewer peppers and skip most of the juice.
5) BBQ Pulled Chicken Sliders
Why it is perfect for hectic nights: Kid-friendly, freezer-friendly, and leftovers are gold.
Makes: about 6 servings
Ingredients (5)
- 1.5 to 2 lb boneless skinless chicken breasts (or thighs)
- 1.5 cups BBQ sauce (about 12 oz)
- 1 (14 to 16 oz) bag coleslaw mix
- 1/2 cup ranch dressing (or mayo)
- Slider buns (for serving)
How to make it
- Add chicken and BBQ sauce to the slow cooker.
- Cook on LOW 4 to 6 hours or HIGH 2.5 to 3.5 hours, until chicken reaches 165°F and shreds easily. Start checking earlier if the breasts are small.
- Shred chicken and stir back into sauce.
- Mix coleslaw mix with ranch dressing for quick slaw.
- Serve chicken on slider buns topped with slaw.
Storage: Pulled chicken keeps 3 to 4 days in the fridge, and freezes well for up to 3 months (freeze without the buns and slaw).
Easy swap: Use store-bought broccoli slaw if that is what you have.
6) Sausage, Peppers, and Onions
Why it feels like a full dinner: Bold flavor with almost no prep. Great over rice, pasta, or tucked into rolls.
Makes: about 4 to 6 servings
Ingredients (5)
- 2 lb Italian sausage links (mild or hot)
- 3 bell peppers, sliced (or 1 (16 oz) bag frozen pepper strips)
- 1 large onion, sliced (or 2 cups frozen sliced onions)
- 1 (24 oz) jar marinara sauce
- Hoagie rolls (or cooked pasta, for serving)
How to make it
- Add peppers and onions to the slow cooker.
- Nestle sausage on top and pour marinara over all.
- Cook on LOW 6 to 7 hours or HIGH 3 to 4 hours, until sausage is cooked through and veggies are tender.
Tip: If you prefer browned sausage, quickly sear the links in a skillet first. Totally optional.
7) Lemon Garlic Butter Chicken and Green Beans
Why it is a lifesaver: Bright, simple flavors and it does not rely on canned soup or heavy sauces.
Makes: about 4 to 6 servings
Ingredients (5)
- 1.5 to 2 lb boneless skinless chicken breasts (or thighs)
- 4 tbsp butter, sliced
- 2 tbsp minced garlic
- 1 lemon (zest and 3 to 4 tbsp juice)
- 4 cups frozen green beans
How to make it
- Add chicken to the slow cooker. Season with salt and pepper.
- Top with butter, garlic, and lemon zest and juice.
- Cook on LOW 4 to 6 hours or HIGH 2.5 to 3.5 hours, until chicken reaches 165°F.
- Add green beans for the last 30 to 45 minutes. For the most reliable texture, switch to HIGH for this final stretch, or use thawed green beans if you want to stay on LOW.
Serve with: potatoes, rice, or crusty bread (not counted).
8) Creamy Tortellini Soup
Why it hits the spot: Cozy soup energy, but with a super short ingredient list.
Makes: about 6 servings
Ingredients (5)
- 1 lb cheese tortellini (refrigerated or frozen)
- 1 (24 oz) jar marinara sauce
- 4 cups chicken broth
- 1 lb Italian sausage (crumbled or sliced)
- 4 packed cups baby spinach
How to make it
- Add marinara, broth, and sausage to the slow cooker.
- Cook on LOW 5 to 6 hours or HIGH 3 to 4 hours.
- Stir in tortellini near the end: refrigerated tortellini usually takes 20 to 30 minutes, and frozen tortellini often takes 30 to 45 minutes. Cook just until tender.
- Stir in spinach at the very end to wilt.
Tip: Tortellini can turn soft if it cooks too long, especially if your slow cooker runs hot. Start checking early.
9) Teriyaki Meatballs and Pineapple
Why kids go for it: Sweet and savory, plus it is almost impossible to mess up.
Makes: about 4 to 6 servings
Ingredients (5)
- 1 (28 to 32 oz) bag frozen fully cooked meatballs
- 1.5 cups teriyaki sauce (about 12 oz)
- 1 (20 oz) can pineapple chunks, drained
- 1 bell pepper, chopped (or 1.5 cups frozen chopped peppers)
- Microwave rice or minute rice (for serving)
How to make it
- Add meatballs, teriyaki sauce, pineapple, and bell pepper to the slow cooker.
- Cook on LOW 4 to 5 hours or HIGH 2 to 3 hours, until everything is hot.
- Serve over rice.
Easy swap: Use orange sauce instead of teriyaki for a different vibe.
10) Cheesy Enchilada Rice Casserole
Why it is a one-pot win: It is hearty, scoops like a casserole, and makes great leftovers for lunch.
Makes: about 6 servings
Ingredients (5)
- 1.5 lb boneless skinless chicken thighs
- 2 cups enchilada sauce (about 16 oz)
- 1 cup long-grain white rice, uncooked
- 1 (4 oz) can diced green chiles
- 2 cups shredded cheese (about 8 oz)
How to make it
- Spray the slow cooker with cooking spray.
- Add chicken thighs, enchilada sauce, rice, green chiles, and 2 cups water (water does not count). Stir gently so the rice is mostly covered.
- Cook on LOW 3 to 4 hours, until rice is tender and chicken is cooked through (165°F). Stir once around the 2-hour mark if you can, to keep rice from clumping at the edges.
- Shred chicken, stir everything together, then sprinkle cheese on top. Cover for 10 minutes to melt.
Important note: Rice can be finicky in slow cookers. If yours runs hot, start checking at 2.5 to 3 hours so the rice does not overcook. If the rice is still firm, splash in 1/4 cup water, cover, and give it another 15 to 20 minutes.
Make it easier
- Use slow cooker liners when your week is already full.
- Keep a freezer dump-bag night: measure the five ingredients into a freezer bag on Sunday, then dump into the slow cooker on a hectic morning.
- Choose thighs when you can: they stay tender and are more forgiving if dinner runs late.
- Add quick sides at the end: steam-in-bag veggies, microwave rice, or store-bought salad kits make these feel like a complete meal fast.
FAQ
Do I really not need to brown meat first?
Most of the time, no. Browning adds flavor, but these recipes are designed to be delicious without that extra step. If you have time, go for it. If not, dinner still wins.
Can I cook these on HIGH instead of LOW?
Usually yes, and I included HIGH times. That said, LOW gives you the best texture, especially for chicken breasts and anything with rice or pasta added later.
How do I keep chicken from drying out?
Use thighs, keep enough sauce or liquid in the pot, and do not overcook. For breasts, I start checking on the early side because thickness and slow cooker models vary a lot. Chicken is done at 165°F and should shred easily.
What counts as an “ingredient” here?
I count the main items you have to buy and remember. Salt, pepper, and water are freebies. If you want to add extras like onions, shredded lettuce, or sour cream, you absolutely can. Five ingredients is the baseline, not a rule to make your life harder.
